Whisk the flour, pepper, salt, paprika, onion powder garlic powder cayenne and sage together in a shallow bowl. Set aside for flour dredge.
In a different shallow bowl, whisk together the buttermilk, hot pepper sauce and egg. Set aside.
Pat the steaks dry. Season with salt and pepper to taste. Let stand for 5 minutes and pat dry again.
Dredge the steaks in the seasoned flour mixture. Shake off any excess flour. Dredge in buttermilk mixture and allow excess to drip off. Dredge in the flour mixture again and shake off excess.
Place the breaded steaks on a sheet pan and press remaining flour mixture onto the steaks. Make sure each steak is completely covered. Let stand for 10 minutes.
Place steaks in the air fryer basket. Lightly coat with vegetable oil spray. Set the air fryer to 400°F for 8 minutes. Turn steaks half way through cook time and spray the other side lightly with vegetable oil spray.
