Corn Casserole

An easy to make side dish.

Ingredients

  • 1 box Jiffy cornbread mix
  • 30 ounces corn 2 cans drained
  • 15 ounces creamed corn 1 can
  • 2 large eggs
  • 1 cup sour cream
  • ¼ cup butter melted
  • ¼ tsp cayenne pepper
  • salt and pepper to taste

Instructions

  • Preheat oven to 350℉.
  • Spray 9 x 9 baking dish with non-stick spray.
  • Pour all ingredients into a large mixing bowl and stir well.
  • Pour into the prepared baking dish and bake for 45 minutes or until the center is set and a toothpick comes out mostly clean.

Notes

The center of the dish should be just set and the toothpick should be mostly clean.  Do NOT overbake.
