Slow Cooker Chicken Noodle Soup

Ingredients
  • 3/4 pounds boneless, skinless chicken thighs, cut into 1 inch strips
  • 2 medium stalks celery, chopped
  • 1 large carrot, chopped
  • 1 medium onion, chopped
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 3/4 cups chicken broth
  • 1 teaspoon dried thyme leaves
  • 1 box (9 oz) frozen baby peas
  • 1 cup frozen home-style egg noodles
Instructions
  1. Heat 10 inch skillet over medium heat until hot. Add chicken and cook until browned, stirring frequently.
  2. Add all ingredients to slow cooker except peas and noodles.
  3. Cover and cook on low for 6 1/2 to 7 hours.
  4. Stir in peas and noodles and cook on low for 10 minutes or until noodles are tender.
