Ingredients

  • 1 can black beans (15 oz) drained and rinsed
  • 1 can pinto beans (15 oz) drained and rinsed
  • 1 can diced tomatoes (14.5 oz)
  • 1 can corn (15 oz)
  • 1 can chicken breast (14 oz) drained
  • 1 can red enchilada sauce (10 oz) can use green for milder
  • 1 can chicken broth (14 oz)
  • 1 packet taco seasoning (1.25 oz)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/4 tsp pepper

Instructions

  • Add all ingredients into your pressure cooker. Close the lid and make sure the knob is on sealing. Push the manual button, and set the timer for 4 minutes. Once the timer is done counting down, you can turn your knob to venting.
  • Serve with shredded cheese, sour cream and tortilla chips.
